A Pasta Dish That's Delish

This is one of those dishes that makes it on repeat in our house at least once a month because it's delicious and easy to make. 

Ziti with Spinach, Cherry Tomatoes, and Gorganzola Sauce

4 oz. uncooked ziti
1/2 teaspoon EVOO
1 cup cherry tomatoes, halved
1/4 teaspoon salt
1/8 teaspoon crushed red pepper
1 clove garlic, minced
6 Tablespoons half & half
3 Tablespoons Gorgonzola cheese crumbles
1 cup fresh spinach

**I bake 1 pound of chicken that I cut up and add to the recipe because I like a protein with my meal every night. 

1. Prepare pasta according to package directions

2. Heat EVOO in a large nonstick skillet over medium heat. Add cherry tomatoes, salt, crushed red pepper, and minced garlic to pan. Cook 1 minute, stirring occasionally. Stir in half & half and Gorgonzola cheese; cook 2 minutes until slightly thick, stirring constantly. Stir in spinach, chicken, and pasta; cook 1 minute or until spinach wilts, tossing occasionally.
