Shrimp & Linguine With Lemon Oil

Summer time is meant for quick and easy dishes. And when that quick and easy dish includes some of my favorite ingredients paired with Giada De Laurentiis' cooking expertise its always an added bonus. 

After Graham was born, watching Kathy Lee and Hoda became somewhat of a morning ritual. Now that he's more on the go, I don't have time for that, but I do try to catch the last 10 minutes because they'll share a great recipe that's usually a winner in our house. This is a recipe I stumbled upon from one of last year's episodes and I still get excited about it every time we have it for supper. 



Ingredients: 

For the lemon oil
1/2 cup olive oil
1 lemon, zested

For the pasta:
1 pound linguine pasta
2 tablespoons olive oil
2 shallots, diced
2 garlic cloves, minced
16 ounces shrimp
1/4 cup lemon juice (about 2 lemons)
1 lemon, zested
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 ounces arugula (about 3 packed cups)
1/4 cup chopped fresh flat-leaf parsley.

Prep time for this dish is 10 minutes and it takes 15 minutes to cook. That beats Rachel Rays 30 minute meals and it is absolutely DELICIOUS!! 

Disclaimer: As a mom of three, I never try for award winning food. I feel accomplished just getting food that tastes good on the table (and sometimes just food) so I leave off anything fancy like the parsley.

Last night we enjoyed it on the patio and topped it off with a refreshing glass of Franciscan Chardonnay....Perfection! Graham even loves it too, but oddly enough shrimp is one of his favorites.
